Creamy Honey-Mayo Salmon

Ingredients:

  • 4 salmon filets
  • 4 tablespoons mayonnaise
  • 2 tablespoons honey
  • Juice of half a lemon
  • Some dill
  • Kosher salt and freshly ground black pepper, to taste
  • 1 stalk of celery, chopped
  • 1 small onion, chopped
  • A splash of water

 

Instructions:

  1. Preheat the oven to 175°C (350°F).
  2. In a small bowl, mix together the mayonnaise, lemon juice, honey, dill, kosher salt, and freshly ground black pepper until well combined.
  3. In a baking dish, add a splash of water, and scatter the chopped celery and onion evenly.
  4. Place the salmon filets on top of the celery and onion. Spread the creamy honey-mayo mixture evenly over the top of each filet.
  5. Cover the baking dish with foil and bake in the preheated oven for 15 minutes. Then, remove the foil and continue baking for an additional 5 minutes, or until the salmon easily flakes with a fork.
  6. Drizzle any leftover sauce over the salmon before serving.
